Why do something fancy when simple is best? Albers' Corn Bread recipe is a perfect example of that. Yep, I'm talking about a recipe on the back of the Albers Corn Meal box. Discovered this taste treat from my MIL. It makes a finer, cakey type corn bread with a subtle baking powder taste. We had it with black bean soup. Here it is:
Albers' Corn Bread
Yield: 12 servings
Preheat oven to 400 degrees.
Grease a 8-inch square baking pan.
1 cup Albers Yellow Corn Meal
1 cup flour
1/4 cup sugar
1 T baking powder
1 t salt
1 cup milk
1/3 cup vegetable oil
1 large egg lightly beaten
1) Combine dry ingredients in a medium bowl. Combine remaining ingredients in a small bowl; mix well. Add milk mixture to flour mixture; stir just until blended.
2 ) Pour into prepared pan ~ 8x8 inch greased baking pan OR 10 to 12 greased or paper-lined muffin cups, filling 2/3 full.
3) Bake for 20-25 minutes* or until wooded pick inserted in center comes out clean. For muffins, bake for 15 minutes.
4) Recipe may be doubled. Use a greased 13x9 inch baking pan; bake as above
5) Serve warm. Delicious with butter, honey, jam or maple syrup.
* I only bake mine for 15 minutes. I like it just done ~ golden on the edges and NOT brown yet in the center.
