Springtime in Luxembourg


White asparagus makes its appearance in April and May. It is popular in all the countries that neighbor Luxembourg but only in Germany is it known as a royal vegetable. White asparagus comes from the same type of plant as the green variety. However, white asparagus is grown with a covering of sand or dirt on top of it to prevent photosynthesis from occurring. No photosynthesis, no green stalks.

Although white asparagus is supposed to be sweeter and more tender than the green it certainly has it's non-believers. I love the green variety so much I see no reason to try the white. I think its traditionally served with a thick cream sauce on top.

Hmmm, anyone out there a white asparagus lover? I love to know how you prepare it.

Love the new banner! I love garden gnomes.
And I am the biggest fan of asparagus and I've never tried the white because it looks to much like something else( you know....) to me. I guess I've just heard it too much to actually try it.

Fresh asparagus is something I look forward to every year. I need to get in gear and plany my own asparagus patch.

I love both green and white, and I like it best roasted (both colors). When you get really, really fresh asparagus (or any vegetable), I don't see any need for the heavy cream sauces, because the vegetables are so delicious just as they are.

I roast with some olive oil and sea salt or kosher salt. Yum!

I love your new banner ! I'm also very fond of green asparagus, but when I (rarely) cook white ones, I peel them (I never peel green ones), and serve them with melted butter and crushed boiled egg (and a bit of salt & pepper). Not need for sauce hollandaise !

I have never seen white asparagus either but if it is anything like the green stuff I can guarantee that I would love it!

I think I will stick with my loved green asparagus! Love the new banner. Every time you change yours I think I need to get on the ball and do something with my lame one but it never seems to happen! Did you take the photo for it? So cute!

I don't really like white asparagus either, I really prefer the green asparagus.
I usually try to prepare it without sauce hollandaise...too much fat in there :-), I serve it with "jambon cru" instead.

I love white asparagus! I've only ever eaten it cold, especially chopped on a salad salt. (Think hearts of palm) But my aunt used to make serve it with a dollop of mayonnaise on it and a squeeze of lemon. Try it!
