Buttermilk Breakfast

buttermilk pancakes
Have you made buttermilk pancakes recently? I hadn't either until a few weeks ago. They are delicious! Why didn't anyone tell me how good they were? Since I had buttermilk sitting in the fridge leftover from my brown bread I thought I'd use it for pancakes. So glad I did.

Here is the recipe I've been using. I found it somewhere on the web, but for the life of me I can't find it again. Glad I wrote it down.

Buttermilk Pancakes

1 cup flour
1 t baking powder
1/4 t baking soda
1/4 t salt
2 T sugar
1 egg
1 1/4 cup buttermilk
40 grams butter (melted and cooled a bit)

1) Sift dry ingredients together.

2) Gently beat egg. Add wet ingredients to dry. Stir to combine. Batter will be slightly lumpy and thick. Add more buttermilk to thin if desired.

3) Cook on a hot griddle or pan.

YUMMERS!

Happy weekend to you!

Pancakes and Buttermilk pancakes for that matter are the perfect way to celebrate the weekend. We are going to make apple pancakes since we have so many apples from the farm we went to last weekend. Hope you had a fantastic weekend.

Funny - as I've just had a go at making them too. I have mine with bacon and maple syrup....they are my new weekend breakfast!

I have to try these...they look wonderful. They remind me of my family in America..these are the type my Aunt Elvie makes...small and high!

The Spouse makes buttermilk pancakes from scratch for the kids every weekend. Sometimes with blueberries.

We tried these this morning - and they will definitely replace our Bisquick pancakes. Light and fluffy! Took me a while to figure out how much 40 grams of butter was, but google helped me out.
Hope we can enjoy these pancakes as a family sometime! :) Keep passing on your good recipes!
