Banana Bread


The girls and I made banana bread today. Haven't made it for a while as the bananas get eaten up so quickly by my youngest. One a day for breakfast. My favorite banana bread recipe comes from a Cooking With A Food Processor cookbook. The book was put out by General Electric when food processors were just gaining in popularity - 1978. It was my mom's cookbook, but somewhere along the way she must have given it to me. Most of the pages have fallen out of the binding and all are grease spotted. I keep it just for the banana bread recipe and because I remember when we got our first food processor. Funny thing to have a memory about. Here it is:

Banana Bread - preheat oven to 350
2 very ripe medium bananas, cut in 1 inch pieces 1/2 cup butter, chilled and cut into 6 pieces

~ Position Knife Blade in bowl. Add bananas and butter; process until finely chopped, about 20 seconds ~


1 1/2 cup flour

3/4 cup sugar
2 eggs

1/4 cup milk

2 t lemon juice or vinegar

1 t baking soda
1/2 t salt


~ Add remaining ingredients:process 10 seconds~

1/2 cup walnuts - I ALWAYS add Chocolate Chips instead.

~ Scrape down sides of bowl. Add nuts if desired. Process 2 -3 seconds longer~


Do not overprocess, this will make the bread coarse. Turn into greased 9x5 inch loaf pan. Bake until bread springs back when touched lightly in center, about 55-60 minutes. Cool Before removing from pan.

This is the best bread. Springy, moist, nice crust. yum. Serve it with a glass of milk.

YUM! Chocolate chips in banana bread is the BEST. (Almost as good as choco chips in pumpkin bread, my favorite.)

You reminded me about the 4 overripe bananas in my freezer. It might be time to turn them into something yummy.

thank you so much for sharing i have been trying to find this recipe for a while now as i had lost my book:( i have tried many others and have failed in comparison. There is only one other I used i believe it was scallop potatoe but my brain isnt working cant remember.But again thank you, going to go make now:)!!
