Finger Licking Good

Almond Butter and Apples
Whoever said ambrosia is the food of the Gods had obviously never tried almond butter.  I think it may be the perfect food.  I'm serious.  Have you tried it?

 In my attempt to eat more protein nut butters kept being suggested.  I love peanut butter so I felt no real need to try any other nut butter varieties.  I'm not sure what made me purchase my first jar of almond but, let me tell you, I haven't looked back since.  I mostly eat it with sliced apples or pears.  This is often times my breakfast or snack, if I'm especially hungry.  I halfheartedly try to keep myself to the serving size suggested on the label but after a generous dollop has been placed in my bowl and my fingers and spoon have been sufficiently licked, well,  it may creep up to be a wee more than a serving.  My apple of choice is Honey Crisp but they are ridiculously expensive right now so I usually eat Pink Ladies.   Since I've discovered this stuff I've never eaten so many apples in my whole life.

I've recently switched from the Kettle brand to the Trader Joe's variety.  TJ's adds flax seeds into the mix.  It doesn't change the taste but does give a nice crunch.  The main reason I've switched is cost. 

If you're an almond butter eater tell me how you like it.  I'm also wondering if anyone has a good method for stirring the oil and nut paste together.  I don't like this part of the process.  I've found a butter knife works best for stirring.  Other than the bits of almond skin that get stuck in my teeth, this is my only complaint.                               Apples

I have almond butter on toast about 4 days a week. I buy it at Costco. I have never noticed almond skins in mine. I'm going to try it with apples. Yum!

I like almond butter stirred into a bowl of oatmeal, along with some honey or brown sugar. I find it's easier to stir if you keep changing the position of the jar: right side up one day, upside down the next. Susan - put thin slices of banana on top of your almond butter toast. Delish. Also great with a frozen waffle.

Jennifer - that gadget is surprisingly low tech. I like that it has a lid to keep the oily goop from splashing out. Where oh where do you find almond butter in Lux? Naturata? Do you make your own?

I used a steak knife to get my almond butter going when I first open it. And I use a slicing motion down to the bottom of the jar for a bit before stirring...seems to be easier. I use the Trader Joe's almond butter with sea salt--haven't seen the flax version yet. I like to do "apple sundaes" with sliced apples, almond butter, sunflower seeds, and raisins. YUM!

Almond Butter is my #2. It's either too thick or too runny and often gritty. The best nut butter is Maranatha Cashew Butter. Stir it once with a regular knife and store it upside down. We make "flowers" -- put apple slices in a circle around a blob of cashew butter with a blueberry on top. Cute and delish. I can't tell you how many jars of cashew butter we go through...

Try the fresh almond butter at Ballard Market (near the bulk). You can grind it yourself (or get one of the prepacked containers). It might be too plain for you though if you're used to the ones with salt but I like it!
