So, this is not really a recipe, but instead a simple cooking method. Really the best way to eat asparagus. Roasting gives the asparagus much more flavor than steaming or blanching. This is how we eat asparagus the majority of the time. It is a quick and simple side. A friend's mother told me how to prepare it this way and I haven't looked back since.
Roasted Asparagus
1 bunch asparagus
Olive oil
Coarse Kosher salt
1) Wash and trim the asparagus. Pat it dry.
2) Place on a baking sheet and drizzle with olive oil. Sprinkle with salt.
3) Bake at 400 F (200 Celsius) to desired tenderness. 5 -15 minutes. Thicker stalks will take longer to cook than thin ones.

This is pretty much the only way I prepare fresh asparagus. I like to drizzle mine with balsamic vinegar, too, before I roast it. Yum!
I'm eager to try this method - I looove asparagus!
I'm a little nervous though because I recently tried roasting broccoli, twice, according to a recipe that claimed to produce the Best Broccoli You've Ever Had or some such hyperbole, and the results were quite disappointing. The method was basically the same as the one you detail here, so maybe I just don't like roasted veggies? Or I did something wrong (though it seems pretty foolproof!).
Anyway, I'll try it!
My children love roasted asparagus. Won't touch steamed. Except one child will not eat the heads which is my favorite part. Way to yummy!
We usually bar-be-que ours. We make a sauce with sesame oil, soy sauce and garlic. This looks yummy too. I've got the ingredients now for the tort and the salad. I love that these recipes are something I can do in a reasonable amount of time. Thanks again! More stinky pee - here we come!!!
